Dear "Skinny Chick", thank you for your fabulous recipe. Just one thing, there was no way I could have waited 2 hours for the brownie to cool...So my bad...or my good, I tried it after 40 minutes. I had way too many eggs leftover after Easter. With their expiration date approaching fast, I decided to make Paradise cake, or Torta Paradiso in Italian, with 8 eggs, butter, flours, sugar and lemon.

I keep digging this recipe. When I had that celery root left over, I even thought about using IT. Maybe next time or year...Then I thought about bananas I bought for banana cake. But I was too impatient to look for a suit-my-day-perfect recipe and I went for one that I already had it in my head...always makes things easier. Knowing that those other cakes ( Very apple and Very carrot cake) incorporated a lot of fruit/vegetable puree beautifully, apart from 2 bananas, I added a whole jar of plum preserves, the tart and dense type (and my very favorite).

Impressed by my Very apple cake, I switched apples for carrots and I'm impressed even more. Why carrot cake now? Because I like this recipe a lot and, in March, I can either buy local Winter or imported Spring produce. Tough choice... not really, I still go for the first one... and patiently wait for the warm sun and ripe Polish strawberries.

I grabbed this recipe book in a magazine shop in Udine, Italy. Rushed by husbands and kids, in front of a wall of publications, I wanted to scream! I took two books. I managed not spend over 10 Euros...as I was on my way to a large store next door with walls of sunglasses.

One of those very simple, all-in-one-bowl, all-from-the-pantry cakes. Kids love it and I don't mind having a mouth full myself...with a small espresso on the side. Well balanced between dry and moist, not too sweet, maybe a bit salty (only the cook will notice), slightly peachy, very enjoyable. Giada, the chef, recommended putting a thick layer of icing on top and cinnamon inside. I swapped icing for raspberry sauce and cinnamon for lemon zest. And some white flour for spelt.

Tuesday, Jan. 22. It's -6 C (20 F) outside. We went to the market, but with -6C...there was no market. Just some old pots and underwear in peculiar colors and shapes. I passed on the pots and undies.
