Carrot cake with nuts and nuts

The recipe was presented on my favorite Italian cooking show as a tribute to the author...some dear Italian lady that is not here anymore. I liked it right away...

Apricot and almond (or ricotta) delicacy

Some fruit bakes better than others... Apricots, with their flesh that is smooth and not too juicy and a mild flavor that only improves in the oven, are one of the tops.

Cheese(or almond)cake swirl brownie with raspberries and rhubarb

Dear "Skinny Chick", thank you for your fabulous recipe. Just one thing, there was no way I could have waited 2 hours for the brownie to cool...So my bad...or my good, I tried it after 40 minutes. I like it already. However, after several hours in the fridge, the brownie tasted like the best ice cream, Hania said. It was creamy, smooth, firm...cold and full of wonderful flavors. :) ela

Rhubarb loaf with white chocolate

To continue my fascination with this long and lean vegetable, I had to put in a loaf. Turns out, it was made for it...

Rhubarb almond (or ricotta) delicacy

I had a picture of it in my head before I made it. I wanted whole stalks of rhubarb on top, as if they were lying on my kitchen table.

Whole spelt Paradise cake on berries

I had way too many eggs leftover after Easter. With their expiration date approaching fast, I decided to make Paradise cake, or Torta Paradiso in Italian, with 8 eggs, butter, flours, sugar and lemon.

Plum banana cake

I keep digging this recipe. When I had that celery root left over, I even thought about using IT. Maybe next time or year...Then I thought about bananas I bought for banana cake. But I was too impatient to look for a suit-my-day-perfect recipe and I went for one that I already had it in my head...always makes things easier. Knowing that those other cakes ( Very apple and Very carrot cake) incorporated a lot of fruit/vegetable puree beautifully, apart from 2 bananas, I added a whole jar of plum preserves, the tart and dense type (and my very favorite).

Very carrot cake (with 2 pounds roasted carrots)

Impressed by my Very apple cake, I switched apples for carrots and I'm impressed even more. Why carrot cake now? Because I like this recipe a lot and, in March, I can either buy local Winter or imported Spring produce. Tough choice... not really, I still go for the first one... and patiently wait for the warm sun and ripe Polish strawberries.

Carrot-almond cake

I felt an instant attraction. And I was not wrong...this time. I saw the making of this carrot cake on RaiUno yesterday. Italians like to eat it around November 1st.

Pear-almond cake w/whole rye

Five pears were sitting on the table. Have been sitting there for the last five days. My first thoughts this morning went to them. Lucky pears!

Apple-berry soft cake w/whole spelt

I grabbed this recipe book in a magazine shop in Udine, Italy. Rushed by husbands and kids, in front of a wall of publications, I wanted to scream! I took two books. I managed not spend over 10 Euros...as I was on my way to a large store next door with walls of sunglasses.

Cake with cherries

Summer fruit cakes. I don't make many. I think Summer delicate fruit tastes better when not cooked or baked. And another thing is that we don't have time to get tired of it. It - blended with cream and sugar. It seems that this is all I do this time of the year. Stand by the sink, hull the strawberries, add cream, add sugar, blend, serve and wash.

Sweet peach cake with raspberry sauce (w/whole spelt)

One of those very simple, all-in-one-bowl, all-from-the-pantry cakes. Kids love it and I don't mind having a mouth full myself...with a small espresso on the side. Well balanced between dry and moist, not too sweet, maybe a bit salty (only the cook will notice), slightly peachy, very enjoyable. Giada, the chef, recommended putting a thick layer of icing on top and cinnamon inside. I swapped icing for raspberry sauce and cinnamon for lemon zest. And some white flour for spelt.

Sunny apple cake

Tuesday, Jan. 22. It's -6 C (20 F) outside. We went to the market, but with -6C...there was no market. Just some old pots and underwear in peculiar colors and shapes. I passed on the pots and undies.
