Back from Croatia and all I feel like having is either ice cream, rucola or red wine. I've figured why... all to keep Summer in my mind. So today, to bring things back somewhat closer to normal (???....) I turned the oven on and made a pie.

I got 4 pounds of rhubarb during the week. I was so excited when I saw it in the store first time this year. I made two rhubarb cakes over the weekend and used most of it, just three stalks left in the fridge.

Can I squeeze in one more Easter recipe...? I made it Saturday afternoon as the last thing on my Easter baking list.  Last because it is the easiest. You can mess it up a bit here and there and it will still turn out irresistible.

Plum-raspberry tart w/whole spelt

I bought a lot of plums again today. But the only person that is serious about eating them is me. Julian is afraid of plums because they are small and he can't really see a plum-gone-bad. Hania says she likes them but I'm not convinced. So I put the plums in a cake and everybody is happy.

Apple cake/tart

There is an apple festival at Hania's school tomorrow. I put apples on top to scare the kids away. I have a couple of girlfriends there that teach but would rather be doing something else...sometimes. The cake is for them!

This is an improved version of a recipe I saw on Rai Uno. We ate the original I made on Sunday, but I wasn't impressed. It got better the next day, but still it was more like a cheesecake than a tart.
