It's a cake! No butter, no eggs, not real flour. I'm not turning vegan or anything but I was out of butter and desperate for a chocolate cake. I didn't find anything in this blog so I quickly hopped over to The Veggie Sisters and got what I needed. And by the way... no mixer, no scale either. Thanks, Girls!

So, this year, I'm making it. It's been in my mom's recipe notebook for 40 years now and there is no Easter without it. The sad thing was, that my parents were moving last year and my mom threw the special babka form away... I don't know, maybe it was leaking or something.

I found it, lost it, didn't cry, forgot about it and found it again today...like a good love story. I came across the recipe while looking for Easter ideas, the first time and the second time. The cake is originally called "Pinolata"...and I thought I remembered that the name had something to do with "Pasqua" (Easter).

More like a bread, but still a cake. Not too sweet, not too moist. Not Paula Dean's style rich carrot cake, but a delicate, light Italian kind. You can taste carrots thanks to the lower sugar content of the cake. I like that.
