Celery root risotto

There was this big old celery root in my fridge..the last thing that had to go before the shopping day. And I was desperate to make something that I would want to eat. Often, that's the part of cooking that takes most of my concentration and energy. The good news is there are things like risottos that still surprise me. And celery...that surprises me too.

Very carrot cake (with 2 pounds roasted carrots)

Impressed by my Very apple cake, I switched apples for carrots and I'm impressed even more. Why carrot cake now? Because I like this recipe a lot and, in March, I can either buy local Winter or imported Spring produce. Tough choice... not really, I still go for the first one... and patiently wait for the warm sun and ripe Polish strawberries.

Whole spelt pizza with arugula pesto and anchovies

I've been making pizzas all Winter long... always after dark. Then one day, there was still daylight after 5pm... And the first pizza that jumped in my blog was this one, with whole spelt, arugula, anchovies and brie.

Whole spelt berry caves

The cookies is a Swedish recipe from a book I got in Ikea recently. "Raspberry caves"... sounded like something I had to make.

Minestrone with broccoli

There comes a day, when a large pot of soup is the right thing to do. Since I'm feeling Italian lately, I made minestrone, which sounds more like an opera piece. Instead, it is a thick, vegetable soup, usually with pasta, rice or beans, that tastes...almost as good as pizza.

Tagliatelle with oyster mushrooms

I got these strange and beautiful mushrooms on Saturday and all Sunday morning I was thinking what to do with them. I try not store in the fridge any kind of mushrooms for more than 24 hours and these caps looked especially sensitive so something had to be done. I thought I'd make a mushroom soup... Hania answered she'd just have pasta instead. Well...that's no fun. So I made pasta with the oysters, added onions...and everybody was happy. Oh yes...we were...

Views from the back seat

A couple of days ago, we went to the big city of PoznaƄ, 4 hours away, to get our car fixed...and to visit my folks. Hania has just turned 12, so she could ride in the front seat. I had no problem giving up the position. I've always been a back-of-the-class-room type person. I enjoyed the trip a lot. Our almost-big girl took on the responsibility of entertaining and listening to the driver like a pro! Me, in the privacy of my back seat, I finished up a chocolate bar, muffins from my sister and took some pictures of...

Bigger apple crumble w/whole spelt

My sister has been baking this apple crumble regularly. She did it when I was visiting her last and was telling me how she made it work with rice flour or xylitol. And she was right, her crumble was fantastic. Good news for me is that she's been actually reading my blog and found this recipe here. So, the other day, when Hania felt like a fruit cake, I dug an old recipe out and made it ... bigger and better!

Roasted vegetable medley with red beans

Hania likes potatoes and beans, Julian likes onions, potatoes and beans...I like this, this and that and the fact that it is headache-and-mess free. Roasted vegetable medley is my family's regular favorite.
